Our original biltong is made from twenty-one day matured prime Welsh beef that is marinated for twenty-four hours in a mix of Worcester sauce and malt vinegar and seasoned with coriander seeds, sea salt and black pepper corns. The meat is then hung up to dry in our purpose built dryers for seventy-two hours before being sliced and packaged and ready for sale. Our beef is supplied by our award-winning, local butcher in Aberystwyth, Rob Rattray, who hand picks his beef from local farms along the coastline and rolling hills of West Wales.
